Crystal’s La Michoacana Rose Announces Expansion
Crystal’s popular crystal ice cream shop, La Michoacana Rose, has announced it’s ready to expand.
La Michoacana Rose plans to open two new locations: one in Edina at 50th and France and another in Spring Lake Park.
“I’m excited. Definitely excited,” said Elizabeth Raygoza, the owner. “But I am a little nervous. It’s a lot of work. But I’m just excited to meet new people. There’s always new faces coming in, and I’m sure we’ll have our regulars, just like we do here. And I’m just excited to make new relationships with the new community.”
The ice cream shop along Bass Lake Road opened last November and sells more than 50 flavors of traditional Mexican snacks and frozen treats, many of which use fresh fruit.
Raygoza is an alumna of Cooper High School, and based on the popularity of her Crystal shop, she felt the time was right to expand.
“I’ve seen all the customers here they’re like, ‘oh what is that?’ and they’ve never even tried it,” Raygoza said. “I’m a foodie, so I live for those things. I love seeing that. And even for myself, when I’m trying new things, it’s like the best experience ever. And I just want to share that with the world.”
Raygoza hopes to have her Edina and Spring Lake Park locations open by the end of June.
