Taqueria Victor Hugo Food Truck Sets Up Shop in Robbinsdale
Bottineau Boulevard is Robbinsdale’s most heavily traveled road. But off to the side in the Robin Center parking lot, is a green and orange truck that’s hard to miss.
That truck is the home of Robbinsdale’s newest dining spot – Taqueria Victor Hugo.
“My husband loves to cook. He always loved to cook,” said Rosa Balmaceda, the co-owner of the business. “He used to work for a restaurant, like a year or so, and then with his friend he decided to start a food truck.”
Rosa Balmaceda and her husband, Hugo, run Taqueria Victor Hugo. Their menu consists of things like tacos, quesadillas and tortas; all prepared with that authentic Mexican flavor.
“On your tacos, it’s not cheese, lettuce and sour cream, because it’s not like that [in Mexico],” Balmaceda said. “It’s like, cilantro and onions is the best thing a taco could have.”
After getting Robbinsdale City Council approval, they decided to set up shop in the Robin Center parking lot at the end of April.
In that short time span, people have taken notice.
“Oh my husband loves to eat here,” Teresa Tlaseca of Crystal. “His favorite food. He can eat it every day.”
“I love these tacos. Y’all have to come try them out. Oh my God,” said Wynter Simpson of Minneapolis. “You have to come and try them out. They are so good, like no lie. I just ordered four.”
Food trucks have long been a staple in downtown Minneapolis and other cities, but Robbinsdale never had a permanent food truck until now.
It’s a quick and easy stop for passersby.
“It’s convenient. It’s in the area. It’s in the neighborhood,” Simpson said. “And I’m pretty sure a lot of people see it.”
The plan is to park the truck in Robbinsdale through November. That gives them an entire summer to grow their customer base.
“If they like it, we might be back next year,” Balmaceda said. “If they want us, we will be back.”
The taco truck will be in the Robin Center parking lot Monday-Saturday from 10:30 a.m. to 8 p.m.
