Six Years Later, Brick & Bourbon’s Popularity Expands Beyond Maple Grove
From cocktail aficionados to foodies to those who simply want a nice ambiance, Brick & Bourbon in Maple Grove has you covered.
“I would say there’s something for everybody here,” said customer Monica Wohlers. “Even if you’re not a drinker they have great food, great atmosphere, good service.”
The restaurant opened six years ago to considerable fanfare.
“We fit something that was maybe missing,” said Gary Sivyer, owner of Brick & Bourbon. “Where we did something a little different than everybody else did. Everybody has something amazing and great, here here and here. But we kind of fit this little niche that was missing.”
The Maple Grove location opened in August of 2018 and has since expanded to include locations in St. Cloud and Eden Prairie. The Stillwater location opened in January of 2018.
Sivyer says all of the food, whether it’s wontons or burgers, is made from scratch.
“There’s not a bad item on our menu, I can honestly say that,” said Sivyer.
And then there are the cocktails, some of which arrive with a bit of a show.
Take for instance, the “Smoking Gun Maple Old Fashioned,” a combination of bourbon, maple syrup and orange bitters topped with a waffle and bacon. The drink is put under glass and immersed in smoke to maximize the flavor.
“I think that’s a big part of who we are and what we stand for,” said Sivyer. “It’s about making sure your experience is an experience. Instead of
food, leave, and we’ll see you later.”
Meanwhile, Brick & Bourbon is planning a big change to its menu. In the next couple of weeks, the restaurant plans to add more gluten free and vegan options.
