Hennepin Tech Students Celebrate Black History Month with Ethnic Cuisine
Students could learn about Black culture and food on Black Exploration Passport Day on at Brooklyn Park’s Hennepin Tech campus Tuesday.
Students could visit educational booths, get a special “passport” stamped, and then use it to sample food from both African and African-American culture.
“Through food, we get a chance to congregate, and we get to teach each other about our history,” said Mark Washington, a culinary student at Hennepin Tech. “And it’s always been done, even on the African continent, it’s always been done through that.”
Mark Washington is one of the students in the culinary program and helped prepare the variety of foods for students during Black Exploration Passport Day.
“This is one of the things that’s close to my heart, is the fact that that people need to appreciate and understand the food and the cultures that are out there that some people demean or some people don’t give the respect they deserve,” Washington said. “And I think it’ll change their mind.”
Some of the food served up included North African samosas, African-American baked macaroni and cheese and braised cabbage with turkey sausage as well as Ethiopian beef stew.
