Pollo Campero Opens in Brooklyn Center
A flavorful chicken that has roots in Guatemala is now available to people in Brooklyn Center.
Tuesday morning marked the grand opening of Pollo Campero at Brooklyn Center’s Shingle Creek Crossing.
Company leaders say they chose Brooklyn Center because of the area’s demographics and the support they received from the city’s economic development group.
“We had several customers who were coming from the north side to our West St. Paul location, which is south of here,” said Blas Escarcega, Pollo Campero’s vice president of franchise development. “And we realized that we could better serve them if we were closer, so that’s why we selected Brooklyn Center.”

The restaurant was first established in Guatemala in 1971. It’s famous for fried chicken ‘marinated to the bone,’ made from recipes that were passed down through multiple generations.
“At the end of the day, when you eat Pollo Campero, it has great flavors, it’s tender, crunchy and juicy,” said Escarcega. “And it has a uniqueness that once you try it, you definitely want to have it again and again.”
This is Minnesota’s second Pollo Campero location. The first opened in West St. Paul more than a decade ago.
