Construction Ramps Up at Future Plymouth Hy-Vee
The remodel of a former Plymouth Cub Foods grocery store has begun in a big way. In fact, it’s now completely gutted. Soon it will reopen as a Hy-Vee grocery store.
Iowa-based Hy-Vee grocery bought the property at 16705 County Road 24 soon after Cub closed in July. Plymouth Hy-Vee store director Rich Winans says construction is taking place five to six days a week.
“It’s going to be a beautiful building,” said Winans.
This will be the first refurbished grocery store that Hy-Vee plans to open in the Twin Cities. Of course the big question is when it will open. Winans said no opening date is set yet.
“The open date is a little fluid right now just due to the construction and gutting of the building that we did,” Winans told Plymouth City Council members at a meeting Tuesday.
Winans did say he opens to announce an open date soon.
