Brooklyn Park Businesses Push for Food Trucks
A Brooklyn Park business called Takeda spearheaded a food truck event on Wednesday and invited city staff to come check it out too. The business collaborative hopes to show how food options are needed along Highway 610. They believe food trucks could help fill that void.
“Really, the nearest place for us to go is HyVee or Sweet Basil,” explained Delaine Iverson, who works at Takeda. “We have to get in our cars and drive. People don’t have long for lunch, so it’s nice to have another option.”
This event is one of several food truck events that the city of Brooklyn Park has held this summer to investigate food truck options.
“How can we become more food truck friendly and get a better reputation around that,” asked Lisa Jacobson, council member. “We are always looking for more restaurants in Brooklyn Park and these are just restaurants on wheels.”
