Soups, Stews and Chilis To Warm Up Winter
How about some warm comfort food for your family meal planning on holiday break?
Hy-Vee Registered Dietitian Alea Lester Fite dropped by CCX Media with a few soup recipes, and we helped make one of those recipes in the studio recently: sloppy joe soup.
Here’s that recipe:
- 2 lbs. 90% lean ground beef
- 1 c. Hy-Vee Short Cuts chopped onions
- 1 c. Hy-Vee Short Cuts chopped tricolor bell peppers
- 2 (10.5-oz.) cans condensed chicken gumbo soup
- 2 c. Hy-Vee 50% less sodium beef broth
- 3 c. Water
- 1 package sloppy joe seasoning
- Hy-Vee seeded hamburger buns, cubed and toasted, for serving
- Fresh dill for garnish
1) Heat a 5-qt. Dutch oven over medium heat. Add beef, onions and bell peppers; cook for 8 to 10 minutes or until beef is browned (165 degrees), stirring occasionally to break up crumbles. Drain and discard drippings.
2) Stir in sloppy joe seasoning, gumbo soup, beef broth and water into ground beef in Dutch oven. Bring to boil; reduce heat. Simmer, uncovered, for 6 to 8 minutes or until heated through.
3) To serve, ladle soup into serving bowls. Top with toasted hamburger bun cubes and fried cucumbers; garnish with dill, if desired.
“This is something that, after you have it, you can freeze some of it later for more meals,” she said. “You can top it with some fresh dill. You can crumble up some whole wheat hamburger buns and put those on top.”
“I like to warm up with soups, stews, and chili,” said Lester Fite, who recommended a recipe for a turkey pumpkin chili:

Ingredients
- – 1 tablespoon avocado oil
- – 1 cup chopped onion
- – ½ cup chopped green bell pepper
- – ½ cup chopped yellow bell pepper
- – 3 clove garlic, minced
- – 1 pound ground turkey
- – 1 (14.5 ounce) can diced tomatoes, unsalted
- – 1 (14.5 ounce) can black beans, unsalted
- – 2 cups pumpkin puree
- – 1 (6oz) can of tomato paste
- – 3 tablespoons chili powder
- – 1 tablespoon cayenne pepper
- – 1 tablespoon cinnamon
- – 1 tsp nutmeg
- – 1 teaspoon ground black pepper
- – 2 tsp salt
Directions:
1) In a pan over medium-high heat, cook ground turkey with diced onions. Cook until turkey is cooked through, and onions are starting to soften.
2) Add turkey and onion mixture, along with all of the other ingredients to a prepared slow cooker.
3) Cook on low for 6-8 hours or high for 4 hours.
