Plymouth Macaron Shop Owner Achieves State Fair Dream
The owner of a Plymouth macaron shop has brought her food truck and a reminder to follow your passion to the Minnesota State Fair.
Seeing Nikkolette Krumheur work, you may never guess she majored in math and worked in corporate America for 20 years.
But in 2018, she took a leap of faith to follow her passion of making macarons full time.
“We do the French macaron, I always say ‘macaroni drop the I, haha,'” said Nikkolette Krumheur, owner of Nikkolette’s Macarons.
Now, she has two shops. Besides the one in Plymouth, she also owns a store in St. Paul, plus the vintage food truck that has made its way to the Great Minnesota Get Together for the second year in a row.
“I’ve lived in Minnesota my whole life and coming to the fair’s a huge deal, so when we got it, I just got the phone call, hung up the phone, and went to my husband and was like ‘we got into the fair! We got into the fair!’ It’s everyone’s kind of dream come true if you have a food business,” said Krumheur.
And dreams can come true, even for those with food allergies. Krumheur said many fair foods are not gluten-allergy friendly. However, Nikkolette’s Macarons are.
“At first I was like we aren’t really a State Fair food, but people are loving them and it’s really nice because they are gluten free,” said Krumheur.
Her truck features fun flavors like sweet corn, cotton candy, root beer float and mini doughnut macarons. She estimates selling around 500 to 600 packages of macarons a day.
“So, the first two days of the fair were record-breaking attendance, so it was crazy busy, which is awesome. The next few days were a little warmer. Now it’s going to be perfect weather days, so it’s going to be really good,” said Krumheur.
Krumheur plans on keeping the truck alive by attending more festivals and fairs in the future.
For now, she will soak in the 12 days of the State Fair.
“I love the fair, I love all parts of the fair, so it’s so fun getting a behind the scenes of the fair and we just get to know all the people around us and it’s like a little family in the West End area,” said Krumheur.
